In Thailand, pomelos are used as a salad ingredient and that’s my favourite way to eat them. Here’s my recipe:
- 1 pomelo
- 1 fresh red chilli
- 1 clove garlic, crushed
- 1 teaspoon honey
- 2 limes, juice of
- 1 stalk finely sliced lemongrass
- Peel and segment a large pomelo (this is a bit of work – it can take 15 minutes to do one fruit) and place the pieces in a bowl.
- Make a dressing by combining the other ingredients.
- Pour the dressing over the fruit and garnish with fresh coriander.
